Ingredients

  • 4 cups cooked mustard greens
  • 1 cup cornmeal

  • 1/4 cup vegetable oil
  • 2 eggs, beaten
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise

  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon paprika
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  2. In a large bowl, combine the cornmeal, flour, sugar, baking powder, and salt. In a separate bowl, whisk together the milk, vegetable oil, and eggs. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  3. Pour the cornbread batter into the prepared baking dish and smooth the top. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Set aside to cool.
  4. In a medium bowl, mix together the shredded cheddar cheese, mayonnaise, sour cream, garlic powder, onion powder, paprika, salt, and pepper.
  5. Once the cornbread has cooled, crumble half of it into the bottom of the baking dish. Layer the cooked mustard greens on top of the cornbread. Spread the cheese mixture evenly over the greens.
  6. Crumble the remaining cornbread on top of the cheese mixture, creating a second layer. Press lightly to compact the ingredients.
  7. Bake for 25-30 minutes, or until the casserole is heated through and the cheese is melted and bubbly. Allow to cool for a few minutes before serving.
