Ingredients

  • 1 leg of lamb, about 4 lbs
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 4-6 slices of bacon

Directions

  1. Preheat the oven to 350°F (175°C).
  2. In a small bowl, mix together the garlic, onion, rosemary, thyme, olive oil, salt, and pepper.
  3. Rub the mixture all over the lamb leg.
  4. Put the leg of lamb in a roasting pan and lay the bacon slices over the top.
  5. Bake in the preheated oven for 20 minutes per pound, or until the internal temperature reaches 145°F (63°C).
  6. Let the lamb rest for 10 minutes before carving.
