Ingredients
- 1 leg of lamb, about 4 lbs
- 2 cloves garlic, minced
- 1 onion, diced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 4-6 slices of bacon
Directions
- Preheat the oven to 350°F (175°C).
- In a small bowl, mix together the garlic, onion, rosemary, thyme, olive oil, salt, and pepper.
- Rub the mixture all over the lamb leg.
- Put the leg of lamb in a roasting pan and lay the bacon slices over the top.
- Bake in the preheated oven for 20 minutes per pound, or until the internal temperature reaches 145°F (63°C).
- Let the lamb rest for 10 minutes before carving.
