This light and fluffy chiffon cake roll is not only a treat for the eyes but also a delight for the taste buds. The tiger skin pattern on the cake gives it a fun and playful twist, making it perfect for special occasions or as a centerpiece for your dessert table.

Ingredients

  • 6 large eggs, separated
  • 3/4 cup granulated sugar, divided
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 3/4 cup cake flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons cocoa powder
  • 1/4 cup hot water
  • 1/2 teaspoon cream of tartar
  • Powdered sugar, for dusting

Directions

  1. Preheat the oven to 350°F and line a 10x15 inch jelly roll pan with parchment paper.
  2. In a large mixing bowl, beat the egg yolks and 1/2 cup of sugar until light and fluffy. Add the vegetable oil and vanilla extract, and mix until well combined.
  3. Sift in the cake flour, baking powder, and salt, and fold gently into the egg yolk mixture.
  4. In a separate bowl, mix the cocoa powder and hot water until smooth. Set aside.
  5. In another clean mixing bowl, beat the egg whites and cream of tartar until soft peaks form. Gradually add the remaining 1/4 cup of sugar and beat until stiff peaks form.
  6. Gently fold the egg whites into the cake batter until no streaks remain.
  7. Divide the batter in half. Gently fold the cocoa mixture into one half of the batter.
  8. Alternate spoonfuls of the plain and cocoa batter in the prepared pan to create a tiger skin pattern.
  9. Bake for 12-15 minutes or until the cake springs back when touched lightly. Remove from the oven and let cool slightly.
  10. Dust a clean kitchen towel with powdered sugar and carefully invert the cake onto it. Peel off the parchment paper and roll the cake along with the towel from the short end. Let cool completely.
  11. Unroll the cake and spread your favorite filling, such as whipped cream or jam, over the surface. Roll the cake back up without the towel and chill in the refrigerator before serving.
  12. Dust with powdered sugar before slicing and serving.
