Ingredients

  • 1 cup wild rice blend
  • 1 cup pearl barley
  • 2 1/2 cups vegetable broth
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil

Directions

  1. Set Instant Pot to sauté mode and add olive oil.
  2. Add diced onion, carrots, celery, and garlic. Cook until onions are translucent.
  3. Add wild rice blend, barley, thyme, rosemary, salt, and pepper. Stir to combine.
  4. Pour in vegetable broth and give everything a good stir.
  5. Close the lid and set the Instant Pot to high pressure for 20 minutes.
  6. Once done, let the pressure release naturally for 10 minutes, then do a quick release.
  7. Fluff the pilaf with a fork and serve hot.
