Carrot halwa is a popular Indian dessert made by cooking grated carrots with sugar, milk, ghee, and nuts until they turn into a rich, sweet pudding-like consistency. This recipe brings out the natural sweetness of carrots and is a perfect treat for special occasions or celebrations.

Ingredients

  • 2 cups grated carrots
  • 2 cups full-fat milk
  • 1/2 cup sugar
  • 1/4 cup ghee
  • 1/4 cup chopped nuts (almonds, cashews, pistachios)
  • 1/4 tsp cardamom powder

Directions

  1. In a heavy-bottomed pan, heat ghee and add grated carrots.
  2. Saute the carrots for 5-10 minutes until they turn soft and reduce in volume.
  3. Add milk to the carrots and stir well. Cook on medium-low heat until the carrots have absorbed the milk.
  4. Add sugar and continue cooking until the mixture thickens and resembles a pudding-like consistency.
  5. Add cardamom powder and chopped nuts, mix well, and cook for another 5 minutes.
  6. Serve hot or chilled, garnished with more nuts on top.
