  • 2 cups diced rhubarb
  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 1 1/2 cups graham cracker crumbs

  • 1/2 cup melted butter
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 eggs

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a saucepan, combine rhubarb, 1/2 cup sugar, cornstarch, and water. Cook over medium heat, stirring constantly, until mixture boils and thickens. Remove from heat and set aside to cool.
  3. In a small bowl, mix together graham cracker crumbs, 1/4 cup sugar, and melted butter. Press mixture into the bottom of a 9-inch springform pan.
