The buttery crust adds a delicious crunch to each bite, while the combination of flavors makes this pie a true winner. Serve it warm or at room temperature for a comforting and satisfying meal.

Ingredients

  • 1 pre-made pie crust
  • 4 slices of bacon
  • 2 medium zucchinis, thinly sliced
  • 1 small onion, thinly sliced
  • 2 cloves of garlic, minced
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 4 large eggs
  • 1 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried thyme

Directions

  1. Preheat your oven to 375°F (190°C).
  2. Place the pre-made pie crust in a 9-inch pie dish and set aside.
  3. In a large skillet, cook the bacon over medium heat until crispy. Remove from the skillet and drain on a paper towel. Crumble the bacon into small pieces and set aside.
  4. In the same skillet, add the sliced zucchinis, onion, and garlic. Sauté until the zucchinis are tender and the onions are translucent, about 5-7 minutes. Remove from heat.
  5. In a medium bowl, whisk together the eggs, milk, salt, black pepper, and dried thyme.
  6. Spread half of the sautéed zucchini mixture onto the pie crust.
  7. Sprinkle half of the crumbled bacon, cheddar cheese, and Parmesan cheese over the zucchini mixture.
  8. Repeat another layer with the remaining zucchini mixture, bacon, cheddar cheese, and Parmesan cheese.
  9. Pour the egg mixture evenly over the top of the pie.
  10. Place the pie dish on a baking sheet and bake in the preheated oven for 30-35 minutes, or until the filling is set and the top is golden.
  11. Remove from the oven and let the pie cool for a few minutes before slicing and serving.
  12. Serve warm or at room temperature.
  13. Enjoy!
