Ingredients

  • 1 cup seitan, sliced
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup baby corn
  • 1 cup coconut milk
  • 2 tablespoons soy sauce
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 cups cooked rice, for serving

Directions

  1. Heat olive oil in a large pan over medium heat.
  2. Add the chopped onion and minced garlic to the pan and sauté until they become translucent.
  3. Add the sliced seitan to the pan and cook for 5 minutes, stirring occasionally.
  4. Add the sliced bell peppers, broccoli florets, and baby corn to the pan.
