Ingredients

  • For the crust:
  • 1 cup all-purpose flour

  • 2 ounces cream cheese, cold and cubed

  • 1/4 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons strong brewed black tea, cooled

Directions

  1. In a food processor, combine the flour, cold butter, and cream cheese. Pulse until the mixture resembles coarse crumbs.
  2. Gather the mixture into a ball and wrap in plastic wrap. Refrigerate for at least 30 minutes.
  3. Preheat the oven to 350°F (175°C).
  4. Grease a mini muffin pan with butter or cooking spray.
  5. In a medium bowl, cream together the softened butter and sugar until light and fluffy.
  6. Add the egg and vanilla extract to the butter mixture. Beat until well combined.
  7. Gradually add the cooled brewed tea to the butter mixture while mixing on low speed.
  8. Remove the chilled dough from the refrigerator. Pinch off small pieces of dough and press them into the wells of the muffin pan, forming a small cup.
  9. Fill each dough cup with about 1 teaspoon of the tea filling.
  10. Bake in the preheated oven for 15-20 minutes or until the crust is golden brown and the filling is set.
  11. Remove from the oven and let the tea tassies cool in the pan for 5 minutes.
  12. Carefully remove the tea tassies from the pan and transfer them to a wire rack to cool completely.
