Directions
- In a large mixing bowl, combine the mashed sweet potatoes, flour, sugar, baking powder, salt, and cold diced butter. Mix until well combined.
- Gradually add the milk to the sweet potato mixture, stirring until a soft dough forms.
- Turn the dough out onto a lightly floured surface and knead for a few minutes until smooth.
- Roll out the dough to about 1/4 inch thickness.
- Using a round cookie cutter or a glass, cut out circles from the dough.
- In a large skillet, melt 2 tablespoons of butter over medium heat.
