Ingredients

  • 2 ripe peaches
  • 1 mango
  • 1 cup diced pineapple
  • 1 red bell pepper
  • 1 jalapeno pepper
  • 1/4 cup chopped cilantro
  • 1/4 cup diced red onion
  • Juice of 1 lime
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 10 flour tortillas
  • 1/4 cup melted butter
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon

Directions

  1. Preheat the oven to 350°F (175°C).
  2. Peel and dice the peaches, mango, and pineapple. Finely chop the red bell pepper, jalapeno pepper, and cilantro. Dice the red onion.
  3. In a mixing bowl, combine the diced peaches, mango, pineapple, red bell pepper, jalapeno pepper, cilantro, and red onion.
  4. Add the lime juice, honey, salt, and black pepper to the bowl. Stir well to combine all the ingredients. Taste and adjust the seasoning as desired.
