Ingredients

  • 1 pound beef sirloin, thinly sliced
  • 1 tablespoon vegetable oil
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups beef broth
  • 2 tablespoons all-purpose flour
  • 1 cup shredded cheese
  • 8 large flour tortillas

Directions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, heat the vegetable oil over medium-high heat.
  3. Add the sliced beef and cook until browned. Remove from skillet and set aside.
  4. In the same skillet, add the sliced onion, bell pepper, and minced garlic. Cook until vegetables are softened.
  5. Add the chili powder, cumin, salt, and black pepper to the skillet. Stir well to coat the vegetables.
  6. In a small bowl, whisk together the beef broth and flour until smooth. Pour the mixture into the skillet with the vegetables.
  7. Bring the mixture to a simmer and cook until the sauce thickens, about 5 minutes.
  8. Return the cooked beef to the skillet and stir to combine with the sauce.
  9. To assemble the burritos, place a spoonful of the beef mixture onto a flour tortilla. Roll the tortilla tightly around the filling and place it seam-side down in a baking dish.
  10. Repeat the process with the remaining tortillas and beef mixture.
  11. Pour the remaining sauce over the burritos in the baking dish, making sure to cover them completely.
  12. Sprinkle the shredded cheese over the top of the burritos.
  13. Bake in the preheated oven for 15-20 minutes or until the cheese is melted and bubbly.
  14. Serve the smothered beef burritos hot with your favorite toppings, such as sour cream, guacamole, or salsa.
