Ingredients

  • 1 cup smoked salmon, flaked
  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 celery stalks, diced
  • 2 carrots, diced
  • 4 cups chicken or vegetable broth
  • 2 cups potatoes, peeled and cubed
  • 1 cup corn kernels
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 2 tablespoons fresh dill, chopped

Directions

  1. In a large pot, melt the butter over medium heat.
  2. Add the onions and garlic and sauté until softened and fragrant, about 5 minutes.
