Ingredients

  • 1 ½ cups crispy rice cereal
  • 1 ½ cups crushed chocolate cookies
  • 3/4 cup unsalted butter, melted
  • 1 ¾ cups powdered sugar
  • 1 cup creamy peanut butter
  • 1 ½ cups semi-sweet chocolate chips
  • 1 tablespoon vegetable oil

Directions

  1. In a large mixing bowl, combine the crispy rice cereal, crushed chocolate cookies, and melted butter. Mix well until all the ingredients are evenly coated.
  2. Press the mixture firmly into the bottom of a greased 9x9-inch baking dish. Ensure it is compact and evenly distributed.
  3. In another mixing bowl, combine the powdered sugar and peanut butter. Stir until well combined and smooth.
  4. Spread the peanut butter mixture evenly over the chocolate cookie crust in the baking dish.
  5. In a microwave-safe bowl, combine the semi-sweet chocolate chips and vegetable oil. Microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth.
  6. Pour the melted chocolate over the peanut butter layer, spreading it evenly with a spatula.
  7. Refrigerate the bars for at least 2 hours, or until firm.
  8. Once the bars have set, remove them from the refrigerator and let them sit at room temperature for about 10 minutes.
  9. Using a sharp knife, cut the bars into squares or rectangles.
  10. Serve and enjoy!
