Ingredients

  • 2 pounds fresh spinach leaves
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 4 garlic cloves, minced
  • 8 ounces cream cheese, softened
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sour cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup bread crumbs
  • 1/4 cup unsalted butter, melted

Directions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, bring salted water to a boil. Add the spinach leaves and blanch for 1-2 minutes, until wilted. Drain and squeeze out excess water from the spinach.
  3. Heat olive oil in a skillet over medium heat. Add the diced onion and minced garlic. Saute until the onion is translucent and the garlic is fragrant.
  4. In a large mixing bowl, combine the cream cheese, grated Parmesan cheese, shredded mozzarella cheese, sour cream, salt, black pepper, nutmeg, and red pepper flakes. Stir until well combined.
