- 2 pounds fresh spinach leaves
- 1 tablespoon olive oil
- 1 medium onion, diced
- 4 garlic cloves, minced
- 8 ounces cream cheese, softened
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup sour cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1/4 teaspoon red pepper flakes
- 1/2 cup bread crumbs
- 1/4 cup unsalted butter, melted
Directions
- Preheat your oven to 350°F (175°C).
- In a large pot, bring salted water to a boil. Add the spinach leaves and blanch for 1-2 minutes, until wilted. Drain and squeeze out excess water from the spinach.
- Heat olive oil in a skillet over medium heat. Add the diced onion and minced garlic. Saute until the onion is translucent and the garlic is fragrant.
- In a large mixing bowl, combine the cream cheese, grated Parmesan cheese, shredded mozzarella cheese, sour cream, salt, black pepper, nutmeg, and red pepper flakes. Stir until well combined.
- Add the sauteed onion and garlic mixture to the cheese mixture. Mix well.
