Ingredients

  • 1 block firm tofu
  • 3 tablespoons curry powder

  • 1/4 teaspoon black pepper
  • 1/4 cup chopped red onion
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced cucumber
  • 1/4 cup sliced almonds
  • 1/4 cup raisins
  • 2 tablespoons chopped fresh cilantro

Directions

  1. Press the tofu to remove excess water.
  2. In a bowl, whisk together curry powder, olive oil, soy sauce, maple syrup, lemon juice, salt, and black pepper.
  3. Cut the tofu into cubes and add it to the curry mixture. Toss well to coat the tofu. Let it marinate for 10 minutes.
