- 1 cup whole wheat flour
- 1/2 cup wheat bran
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1 cup pumpkin puree
- 1/2 cup unsweetened applesauce
- 1/4 cup raisins
- 2 eggs
- 1/4 cup milk
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
Directions
- Preheat the oven to 350°F and line a muffin tin with liners.
- In a mixing bowl, combine the whole wheat flour, wheat bran, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a separate bowl, mix together the pumpkin puree, applesauce, raisins, eggs, milk, honey or maple syrup, and vanilla extract.
