Ingredients
- 1 cup cooked chicken, shredded
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup shredded Monterey Jack cheese
- 1/2 cup diced red bell pepper
- 1/4 cup diced green onions
- 1/4 cup chopped fresh cilantro
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 12 egg roll wrappers
- Vegetable oil for frying
- 1 ripe avocado
- 2 tablespoons sour cream
- 1 tablespoon lime juice
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Directions
- In a large bowl, combine the cooked chicken, black beans, corn, Monterey Jack cheese, red bell pepper, green onions, cilantro, cumin, chili powder, garlic powder, salt, and black pepper.
- Place an egg roll wrapper on a clean surface, with one corner pointing towards you. Spoon about 2 tablespoons of the filling onto the center of the wrapper.
- Fold the bottom corner over the filling, tucking it in tightly. Fold the left and right corners towards the center, creating an envelope. Roll the egg roll away from you, sealing the top corner with a bit of water.
- Repeat with the remaining wrappers and filling.
- Heat vegetable oil in a large skillet or deep fryer to 350°F (175°C). Fry the egg rolls in batches for about 3-4 minutes, or until golden brown and crispy. Place them on a paper towel-lined plate to drain excess oil.
- In a small bowl, mash the ripe avocado with sour cream, lime juice, salt, and pepper. Serve the Southwestern egg rolls with the avocado dip on the side.
- Enjoy these delicious Southwestern Egg Rolls as an appetizer or a main dish with a side of salsa and sour cream.
