Ingredients

  • 2 pheasant breasts, boneless and skinless
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1/4 cup all-purpose flour, for thickening

Directions

  1. Preheat the oven to 350°F (175°C).
  2. In a large oven-safe skillet or casserole dish, heat the olive oil over medium heat.
  3. Add the diced onion, sliced carrots, diced celery, and minced garlic to the skillet. Cook until the vegetables are softened, about 5 minutes.
  4. Season the pheasant breasts with salt, pepper, dried thyme, and dried rosemary.
  5. Push the vegetables to one side of the skillet and add the seasoned pheasant breasts. Cook until browned on both sides, about 3 minutes per side.
  6. Pour in the diced tomatoes and chicken broth. Stir well to combine all the ingredients.
  7. Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven.
  8. Bake for 40-45 minutes, or until the pheasant is cooked through and tender.
