Ingredients

  • For the cake:
  • 2 ½ cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • Blue food coloring
  • For the blueberry frosting:
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/2 cup blueberry jam
  • 1 teaspoon vanilla extract
  • For the blue icing:
  • 2 cups powdered sugar
  • 2-3 tablespoons milk
  • Blue food coloring

Directions

  1. Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream the butter and sugar together until light and fluffy.
  4. Beat in the eggs, one at a time, followed by the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.
  6. Add a few drops of blue food coloring and mix until the batter reaches your desired shade of blue. Be careful not to add too much coloring as it may affect the taste.
  7. Divide the batter equally among the prepared cake pans. Smooth the tops with a spatula.
  8. Bake for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean.
  9. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer them to a wire rack to cool completely.
  10. While the cakes are cooling, prepare the blueberry frosting. In a mixing bowl, beat the softened butter until creamy.
  11. Gradually add the powdered sugar and beat until well combined.
  12. Add the blueberry jam and vanilla extract. Beat until the frosting is smooth and fluffy.
  13. Place one cake layer on a serving plate and spread a generous amount of blueberry frosting on top.
  14. Repeat with the remaining cake layers, spreading frosting between each layer.
  15. Once all the layers are stacked, frost the sides and top of the cake with the remaining blueberry frosting.
  16. In a separate bowl, whisk together the powdered sugar and milk to make the blue icing. Add blue food coloring to achieve a vibrant blue color.
  17. Pour the blue icing over the top of the cake, allowing it to drip down the sides.
  18. Use a spatula or the back of a spoon to spread the icing evenly over the cake.
  19. Let the cake set for at least 20 minutes before serving to allow the icing to firm up.
  20. Slice and serve the Bright Blue Monday Cake. Enjoy!
