Ingredients

  • 2 pounds beef stew meat, cut into cubes
  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 celery stalks, sliced
  • 1 can crushed tomatoes (28 ounces)
  • 4 cups beef broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and black pepper, to taste

Directions

  1. Heat vegetable oil in a large pot or Dutch oven over medium heat.
  2. Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set aside.
  3. Add the diced onions to the pot and cook until translucent. Add the minced garlic and cook for an additional minute.
  4. Return the beef stew meat to the pot. Add the carrots, potatoes, celery, crushed tomatoes, beef broth, bay leaf, dried thyme, paprika, salt, and black pepper.
  5. Stir everything together and bring the stew to a boil. Once boiling, reduce the heat to low and cover the pot.
  6. Simmer the stew for 2 hours, stirring occasionally. This will allow the flavors to meld together and the beef to become tender.
