Ingredients

  • 6 egg yolks
  • 3/4 cup granulated sugar
  • 2/3 cup milk
  • 1 1/4 cups heavy cream

  • 1 cup strong brewed coffee, cooled
  • 3 tablespoons rum or coffee liqueur
  • 24 ladyfingers
  • 2 tablespoons unsweetened cocoa powder

Directions

  1. In a heatproof bowl, whisk together the egg yolks and sugar until well combined.
  2. Place the bowl over a saucepan of simmering water, making sure the bottom of the bowl does not touch the water.
  3. Slowly whisk in the milk and continue whisking until the mixture thickens, about 8-10 minutes.
  4. Remove the bowl from heat and let it cool to room temperature.
  5. In another bowl, beat the heavy cream and vanilla extract until soft peaks form.
  6. Fold in the mascarpone cheese until well combined.
  7. Gently fold the mascarpone mixture into the cooled egg yolk mixture until smooth.
  8. In a shallow dish, combine the coffee and rum or coffee liqueur.
  9. Dip each ladyfinger into the coffee mixture, turning to coat both sides, and arrange them in a single layer in a 9x13-inch baking dish.
  10. Spread half of the mascarpone mixture over the ladyfingers.
  11. Repeat the layers with the remaining ladyfingers and mascarpone mixture.
  12. Cover the dish and refrigerate for at least 4 hours or overnight.
  13. Before serving, dust the top with cocoa powder.
  14. Cut into squares or slices and serve chilled.
