Ingredients

  • 2 pounds beef stew meat, cut into cubes
  • 2 tablespoons all-purpose flour
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, peeled and cut into chunks
  • 4 potatoes, peeled and cut into chunks
  • 2 parsnips, peeled and cut into chunks
  • 2 turnips, peeled and cut into chunks
  • 4 cups beef broth
  • 1 cup Guinness stout
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Chopped fresh parsley, for garnish

Directions

  1. In a large bowl, toss the beef stew meat with the flour until evenly coated.
  2. Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the beef on all sides, working in batches if needed. Remove the beef from the pot and set aside.
  3. In the same pot, sauté the onion and garlic until softened and fragrant.
  4. Add the carrots, potatoes, parsnips, and turnips to the pot. Cook for a few minutes until slightly browned.
  5. Return the beef to the pot and add the beef broth, Guinness stout, tomato paste, Worcestershire sauce, bay leaves, dried thyme, salt, and pepper.
  6. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 1 hour, or until the beef is tender and the flavors have melded together.
  7. Taste and adjust the seasoning if needed.
  8. Garnish with chopped fresh parsley before serving.
