Ingredients

  • 4 swai fillets
  • 1 onion, thinly sliced
  • 2 cloves of garlic, minced
  • 8 oz mushrooms, sliced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley

Directions

  1. Season the swai fillets with salt and pepper on both sides. Set aside. In a large skillet, melt the butter over medium heat. Add the sliced onion and minced garlic and cook until softened, about 5 minutes. Add the sliced mushrooms to the skillet and cook until they release their moisture and start to brown, about 8-10 minutes. Push the mushrooms to the side and add the swai fillets to the skillet. Cook for 3-4 minutes per side until they are cooked through and flake easily. Remove the fillets from the skillet and set aside. In the same skillet, sprinkle the flour evenly over the mushrooms and cook for 1-2 minutes, stirring constantly. Gradually whisk in the chicken broth, making sure to scrape up any browned bits from the bottom of the skillet. Stir in the heavy cream and dried thyme. Reduce the heat to low and simmer for 5 minutes, until the sauce thickens slightly. Return the swai fillets to the skillet, spooning the sauce over them. Cook for another 2-3 minutes to heat through. Serve the smothered swai garnished with chopped fresh parsley. Enjoy!
