These Southwest Crab Phyllo Bites are a perfect party appetizer or a delightful snack for any occasion. Ingredients

  • 8 sheets phyllo pastry
  • 1/2 cup butter, melted
  • 1/2 cup diced red bell pepper
  • 1/4 cup diced red onion
  • 1 garlic clove, minced
  • 1 jalapeno, seeded and minced
  • 1 cup cooked crab meat
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup mayonnaise
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, sauté the diced red bell pepper and red onion in a little bit of oil until they are softened.
  3. Add the minced garlic and jalapeno to the skillet and cook for another minute.
  4. Remove the skillet from heat and let it cool.
  5. In a mixing bowl, combine the cooked crab meat, shredded Monterey Jack cheese, sautéed vegetables, mayonnaise, chopped fresh cilantro, ground cumin, chili powder, salt, and black pepper. Mix well.
  6. Brush each sheet of phyllo pastry with melted butter and layer them on top of each other.
  7. Cut the phyllo pastry into squares or circles, about 2 inches in diameter.
  8. Place each phyllo square or circle into the cups of a mini muffin tin, pressing gently to form a cup shape.
  9. Spoon a generous teaspoon of the crab filling into each phyllo cup.
  10. Bake in the preheated oven for 10-12 minutes or until the phyllo cups are golden brown and crispy.
  11. Remove from the oven and let them cool slightly before serving.
  12. Garnish with additional chopped cilantro, if desired.
  13. Serve warm and enjoy!
