Ingredients
- 8 sheets phyllo pastry
- 1/2 cup butter, melted
- 1/2 cup diced red bell pepper

- 1 cup cooked crab meat
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup mayonnaise
- 1/4 cup chopped fresh cilantro
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Directions
- Preheat the oven to 375°F (190°C).
- In a skillet, sauté the diced red bell pepper and red onion in a little bit of oil until they are softened.
- Add the minced garlic and jalapeno to the skillet and cook for another minute.
- Remove the skillet from heat and let it cool.
- In a mixing bowl, combine the cooked crab meat, shredded Monterey Jack cheese, sautéed vegetables, mayonnaise, chopped fresh cilantro, ground cumin, chili powder, salt, and black pepper. Mix well.
- Brush each sheet of phyllo pastry with melted butter and layer them on top of each other.
- Cut the phyllo pastry into squares or circles, about 2 inches in diameter.
- Place each phyllo square or circle into the cups of a mini muffin tin, pressing gently to form a cup shape.
