Ingredients

  • 8 oz. of soba noodles
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cucumber, julienned
  • 2 carrots, julienned
  • 3 green onions, thinly sliced
  • 1/4 cup of sesame seeds
  • 1/4 cup of chopped fresh cilantro
  • 1/4 cup of soy sauce
  • 2 tbsp of sesame oil
  • 2 tbsp of rice vinegar
  • 1 tbsp of honey
  • 1 tbsp of grated ginger
  • 1 clove of garlic, minced
  • Salt and pepper to taste

Directions

  1. Cook the soba noodles according to the package instructions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked soba noodles, red bell pepper, yellow bell pepper, cucumber, carrots, green onions, sesame seeds, and cilantro.
  3. In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey, ginger, garlic, salt, and pepper to make the dressing.
  4. Pour the dressing over the noodle mixture and toss until well combined.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving.
  6. Garnish with extra sesame seeds and cilantro before serving.
