- 1 lb pork shoulder, cut into chunks
- 1 lb beef chuck, cut into chunks
- 3 tablespoons vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 carrots, sliced
- 4 potatoes, peeled and sliced
- 1 can (14 oz) crushed tomatoes
- 1 tablespoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Directions
- Preheat the oven to 325°F (165°C).
- In a large oven-safe pot or casserole dish, heat the vegetable oil over medium-high heat.
- Add the pork and beef chunks to the pot and cook until browned on all sides. Remove the meat from the pot and set aside.
- In the same pot, add the chopped onion and minced garlic. Sauté until fragrant and golden.
- Add the sliced bell peppers and carrots to the pot. Cook for a few minutes until slightly softened.
- Return the browned meat to the pot.
- Pour in the crushed tomatoes and stir well to combine.
- Add the paprika, dried thyme, dried rosemary, bay leaf, salt, and pepper. Stir to coat the meat and vegetables evenly.
