Ingredients

  • 1 lb pork shoulder, cut into chunks
  • 1 lb beef chuck, cut into chunks
  • 3 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 carrots, sliced
  • 4 potatoes, peeled and sliced
  • 1 can (14 oz) crushed tomatoes
  • 1 tablespoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Directions

  1. Preheat the oven to 325°F (165°C).
  2. In a large oven-safe pot or casserole dish, heat the vegetable oil over medium-high heat.
  3. Add the pork and beef chunks to the pot and cook until browned on all sides. Remove the meat from the pot and set aside.
  4. In the same pot, add the chopped onion and minced garlic. Sauté until fragrant and golden.
  5. Add the sliced bell peppers and carrots to the pot. Cook for a few minutes until slightly softened.
  6. Return the browned meat to the pot.
  7. Pour in the crushed tomatoes and stir well to combine.
  8. Add the paprika, dried thyme, dried rosemary, bay leaf, salt, and pepper. Stir to coat the meat and vegetables evenly.
  9. Cover the pot with a lid and transfer it to the preheated oven.
  10. Bake for 1 hour, then remove the lid and arrange the sliced potatoes on top of the meat and vegetables.
  11. Cover the pot again and continue baking for another 45 minutes to 1 hour, or until the potatoes are cooked through and the meat is tender.
  12. Remove the pot from the oven and let it rest for a few minutes.
  13. Garnish with fresh chopped parsley before serving.
