Ingredients

  • 4 salmon fillets
  • 1 cup of white rice
  • 2 cups of water
  • 1 tablespoon of olive oil
  • 4 tomatoes, sliced
  • 1/2 cup of all-purpose flour
  • 1 teaspoon of salt
  • 1 teaspoon of paprika
  • 1/2 teaspoon of black pepper
  • 1/4 teaspoon of garlic powder
  • 1/4 teaspoon of onion powder
  • 1/4 teaspoon of dried oregano
  • 1/4 teaspoon of dried thyme
  • 1/4 teaspoon of dried basil
  • 2 tablespoons of butter
  • 1 tablespoon of vegetable oil

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse the salmon fillets under cold water and pat them dry with paper towels. Set aside.
  3. In a medium pot, combine the rice, water, and a pinch of salt. Bring to a boil over high heat. Reduce the heat to low, cover, and let simmer for 15-20 minutes or until the rice is tender and the water has been absorbed. Fluff the rice with a fork and set aside.
