Ingredients
- 4 salmon fillets
- 1 cup of white rice
- 2 cups of water
- 1 tablespoon of olive oil
- 4 tomatoes, sliced
- 1/2 cup of all-purpose flour
- 1 teaspoon of salt
- 1 teaspoon of paprika
- 1/2 teaspoon of black pepper
- 1/4 teaspoon of garlic powder
- 1/4 teaspoon of onion powder
- 1/4 teaspoon of dried oregano
- 1/4 teaspoon of dried thyme
- 1/4 teaspoon of dried basil
- 2 tablespoons of butter
- 1 tablespoon of vegetable oil
Directions
- Preheat the oven to 400°F (200°C).
- Rinse the salmon fillets under cold water and pat them dry with paper towels. Set aside.
- In a medium pot, combine the rice, water, and a pinch of salt. Bring to a boil over high heat. Reduce the heat to low, cover, and let simmer for 15-20 minutes or until the rice is tender and the water has been absorbed. Fluff the rice with a fork and set aside.
- In a shallow dish, mix together the all-purpose flour, salt, paprika, black pepper, garlic powder, onion powder, dried oregano, dried thyme, and dried basil.
- Dredge the salmon fillets in the seasoned flour mixture, making sure to coat them evenly.
- In a large skillet, heat the olive oil over medium-high heat. Add the salmon fillets and cook for 3-4 minutes on each side or until they are golden brown. Transfer the salmon to a baking sheet and place it in the preheated oven for 8-10 minutes or until the salmon is cooked through and flakes easily with a fork.
- While the salmon is baking, heat the butter and vegetable oil in another skillet over medium heat. Add the sliced tomatoes and cook for 2-3 minutes on each side or until they are slightly golden and tender.
- Serve the salmon fillets on a bed of fluffy rice, garnished with the fried tomatoes. Enjoy!
