Ingredients

  • 2 pounds rutabaga
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1/2 cup grated cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup bread crumbs
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste

Directions

  1. Peel and dice the rutabaga into small cubes.
  2. Boil the rutabaga in a large pot of salted water until tender, about 20 minutes. Drain and set aside.
  3. In a separate saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until mixture becomes golden brown.
  4. Slowly whisk in the milk until the mixture is smooth and creamy. Cook for 3-4 minutes until thickened.
  5. Remove the saucepan from heat and stir in the cheddar and Parmesan cheese until melted. Season with salt, pepper, and garlic powder.
  6. Preheat the oven to 350°F (175°C).
  7. In a greased baking dish, add the cooked rutabaga and pour the cheese sauce over the top. Mix well to combine.
  8. In a small bowl, combine the breadcrumbs with a little melted butter. Sprinkle the breadcrumb mixture evenly over the casserole.
  9. Bake in the preheated oven for 30 minutes until the top is golden and the casserole is heated through.
  10. Serve hot and enjoy!
