Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

  • 1/4 teaspoon cloves
  • 1/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup pumpkin puree
  • 2 eggs
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • 1/3 cup brown sugar
  • 1 teaspoon cinnamon

Directions

  1. Preheat oven to 350°F and grease a 9x5 inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In a separate large bowl, cream together butter and granulated sugar until light and fluffy.
  4. Beat in pumpkin puree, then add eggs one at a time, mixing well after each addition.
  5. Stir in milk and vanilla extract.
  6. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  7. In a small bowl, mix together brown sugar and cinnamon for the swirl.
  8. Pour half of the batter into the prepared loaf pan, then sprinkle half of the cinnamon sugar mixture on top.
  9. Add the remaining batter on top, then sprinkle the rest of the cinnamon sugar mixture.
  10. Use a knife to swirl the batter and cinnamon sugar together.
  11. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  12. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing and serving.
