Indulge in the creamy and silky texture of this pumpkin creme brulee, a perfect dessert for fall gatherings. The combination of pumpkin puree, warm spices, and a crispy caramelized topping will have your taste buds singing with joy.

Ingredients

  • 2 cups heavy cream
  • 1/2 cup granulated sugar
  • 6 large egg yolks
  • 1/2 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 1/4 cup brown sugar for caramelizing

Directions

  1. Preheat the oven to 325°F and place six ramekins in a baking dish.
  2. In a saucepan, heat the cream with half of the sugar until it starts to simmer.
  3. In a bowl, whisk together the egg yolks with the remaining sugar until pale and thick.
  4. Slowly pour the hot cream into the egg mixture, stirring constantly.
  5. Add the pumpkin puree, vanilla extract, and spices, and mix until well combined.
  6. Divide the mixture among the ramekins and fill the baking dish with hot water halfway up the sides of the ramekins.
  7. Bake for 40-45 minutes until the custards are set but still slightly jiggly.
  8. Chill the custards in the fridge for at least 2 hours or overnight.
  9. Before serving, sprinkle a thin layer of brown sugar on top of each custard and caramelize with a kitchen torch.
  10. Let the brulees sit for a minute to allow the sugar to harden before serving.
