Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup vegetable oil
  • 1/2 teaspoon salt
  • 1 cup boiled potatoes, mashed
  • 1/2 cup peas
  • 1/2 cup carrots, finely chopped
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon chili powder
  • Salt to taste
  • Oil for frying

Directions

  1. In a large mixing bowl, combine the flour, vegetable oil, salt, and enough water to make a stiff dough. Cover and let it rest for 30 minutes.
  2. Meanwhile, heat some oil in a pan and add cumin seeds. Once they splutter, add the chopped vegetables and cook until soft.
  3. Add the mashed potatoes, peas, turmeric powder, garam masala, chili powder, and salt. Mix well and cook for another 5 minutes. Let the filling cool down.
  4. Divide the dough into small balls and roll each ball into a circle. Cut each circle in half to make semicircles.
  5. Take one semicircle, wet the straight edge, and form a cone shape. Fill the cone with the vegetable mixture and seal the edges tightly.
  6. Heat oil in a pan for frying and deep fry the samosas until they are golden brown and crispy. Drain excess oil on a paper towel.
  7. Serve hot with chutney or ketchup and enjoy your homemade veggie samosas!
