- 3 pounds beef chuck roast

Directions
- Preheat your oven to 325°F (165°C).
- Season the beef chuck roast with salt and black pepper.
- Heat vegetable oil in a large Dutch oven or oven-safe pot over medium-high heat.
- Add the seasoned roast and sear it on all sides until browned. Remove the roast from the pot and set aside.
