Ingredients

  • 2 tablespoons vegetable oil
  • 1 pound large shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 1 small onion, finely diced
  • 1 red bell pepper, finely diced
  • 1 cup frozen peas and carrots
  • 3 cups cooked jasmine rice, chilled
  • 1 cup pineapple chunks, drained
  • 3 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1/2 teaspoon sesame oil
  • 1/4 teaspoon black pepper
  • 2 green onions, thinly sliced
  • Fresh cilantro leaves, for garnish
  • Lime wedges, for serving

Directions

  1. In a large skillet or wok, heat the vegetable oil over medium heat.
  2. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, add the minced garlic and diced onion. Cook until the onion is translucent, about 2-3 minutes.
  4. Add the diced red bell pepper and frozen peas and carrots. Stir-fry for an additional 3-4 minutes, until the vegetables are tender.
  5. Push the vegetables to one side of the skillet and add the chilled jasmine rice to the empty space. Break up any clumps and stir-fry for 2-3 minutes, mixing it with the vegetables.
  6. Return the cooked shrimp to the skillet and add the drained pineapple chunks.
  7. In a small bowl, whisk together the soy sauce, fish sauce, sesame oil, and black pepper. Pour the sauce over the rice and shrimp mixture. Stir-fry for another 2-3 minutes, until everything is heated through and well combined.
  8. Remove the skillet from heat and garnish with green onions and fresh cilantro leaves.
