Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup ice water
  • 4-5 ripe peaches, pitted and sliced
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 egg, beaten
  • 1 tablespoon turbinado sugar (optional, for sprinkling)

Directions

  1. In a large mixing bowl, whisk together the flour and salt.
  2. Add the cold butter cubes to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until it resembles coarse crumbs.
  3. Gradually add the ice water, stirring lightly with a fork, until the dough comes together. Be careful not to overmix.
  4. Divide the dough into two equal parts and shape each into a disc. Wrap them in plastic wrap and refrigerate for at least 30 minutes.
  5. Preheat the oven to 375°F (190°C).
  6. In a separate mixing bowl, combine the sliced peaches, granulated sugar, cornstarch, lemon juice, and vanilla extract. Gently toss until the peaches are well coated.
  7. On a lightly floured surface, roll out one disc of dough to about 1/8-inch thickness. Cut out circles slightly larger than the size of your tartlet pans.
  8. Press the dough circles into the tartlet pans, ensuring they cover the bottom and sides. Trim off any excess dough.
  9. Fill each tartlet shell with the peach filling, leaving a small border at the top.
  10. Roll out the second disc of dough and cut out lattice strips or any desired shape. Place the dough strips over the peach filling in a lattice pattern or any decorative design.
  11. Brush the lattice top with beaten egg and sprinkle with turbinado sugar for a golden and crispy crust.
  12. Bake the tartlets in the preheated oven for 25-30 minutes, or until the crust is golden brown and the peach filling is bubbling.
