Ingredients
- 2/3 cup unsalted butter
- 1 cup almond flour
- 1 cup powdered sugar
- 1/2 cup all-purpose flour
- 4 egg whites
- 1 teaspoon vanilla extract
- 2 ripe peaches, thinly sliced
- Powdered sugar, for dusting
Directions
- Preheat the oven to 350°F (175°C) and grease a financier mold or muffin tin.
- In a small saucepan, melt the butter over medium heat until it turns golden brown, about 5 minutes. Remove from heat and let cool.
- In a large bowl, whisk together the almond flour, powdered sugar, and all-purpose flour.
- In a separate bowl, whisk the egg whites until frothy. Gradually add the dry ingredients to the egg whites, stirring until well combined.
- Slowly pour in the melted butter and vanilla extract, stirring until the batter is smooth and glossy.
- Divide the batter evenly among the molds, filling each one about 2/3 full. Press a few slices of peach into each mold, slightly submerging them into the batter.
- Bake for 20-25 minutes or until the financiers are golden brown and a toothpick inserted into the center comes out clean.
- Allow the financiers to cool in the mold for 10 minutes, then transfer them to a wire rack to cool completely.
- Dust the cooled financiers with powdered sugar before serving.
