Ingredients
- 2 cups cooked rice
- 1 cup leftover cooked meat (such as chicken, beef, or pork)
- 1/2 cup mixed vegetables (such as peas, carrots, and corn)
- 3 tablespoons vegetable oil, divided
- 1 small onion, diced
- 3 cloves garlic, minced
- 3 tablespoons ketchup
- 2 tablespoons soy sauce
- Salt and pepper to taste
- 4 large eggs
- 1/4 cup milk
- 1/4 cup shredded cheese (such as Cheddar or mozzarella)
Directions
- In a large skillet, heat 2 tablespoons of vegetable oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion becomes translucent.
- Add the mixed vegetables and leftover cooked meat to the skillet. Cook until the vegetables are tender and the meat is heated through.
- Add the cooked rice to the skillet and mix well with the vegetables and meat. Season with salt and pepper to taste.
- In a separate bowl, whisk together the eggs, milk, salt, and pepper.
- Heat the remaining tablespoon of vegetable oil in a non-stick skillet over medium heat. Pour half of the egg mixture into the skillet and tilt the pan to spread it evenly.
- Once the edges of the omelet start to set, use a spatula to gently push the cooked edges towards the center, allowing the uncooked egg mixture to flow to the edges.
