Ingredients

  • 1 (12-14 pound) turkey, thawed if frozen
  • 1 cup rolled oats
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh sage, chopped
  • 1/4 cup fresh thyme leaves
  • 4 cloves garlic, minced
  • 1 tablespoon lemon zest
  • 1 tablespoon olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 cup chicken broth

Directions

  1. Preheat the oven to 325°F (165°C).
  2. Remove the giblets and neck from the turkey cavity. Rinse the turkey inside and out, and pat it dry with paper towels.
  3. In a small bowl, combine the rolled oats, parsley, sage, thyme, garlic, lemon zest, olive oil, salt, and black pepper. Mix well to create the herb and oat mixture.
  4. Rub the herb and oat mixture all over the turkey, making sure to coat it evenly. Press the mixture onto the turkey to adhere.
  5. Place the turkey on a rack in a roasting pan, breast side up. Pour the chicken broth into the bottom of the pan.
  6. Cover the turkey loosely with aluminum foil and roast for 2 hours.
  7. Remove the foil and continue roasting for an additional 1-2 hours, or until the internal temperature of the turkey reaches 165°F (75°C). Baste the turkey with the pan juices every 30 minutes.
  8. Once cooked, transfer the turkey to a cutting board and let it rest for 20-30 minutes before carving.
