Ingredients
- 1 cup creamy peanut butter
- 1 cup semisweet chocolate chips
- 1 cup butterscotch chips
- 1/2 cup unsalted butter
- 2 cups quick-cooking oats
- 1 cup packed brown sugar
- 1/2 cup light corn syrup
- 1 teaspoon vanilla extract
- 1 cup dry roasted peanuts (chopped)
Directions
- In a large saucepan, melt the butter over medium heat.
- Add the brown sugar and corn syrup to the melted butter. Stir until the sugar is dissolved and the mixture is smooth.
- Remove the saucepan from the heat and stir in the peanut butter and vanilla extract until well combined.
- Fold in the oats and chopped peanuts until evenly coated.
- Press the mixture into a greased 9x13-inch baking dish, spreading it out evenly.
- In a microwave-safe bowl, melt the chocolate chips and butterscotch chips together in the microwave, stirring every 30 seconds until smooth.
- Pour the melted chocolate mixture over the oat mixture in the baking dish, spreading it out with a spatula.
- Place the dish in the refrigerator for at least 2 hours, or until the bars are firm and set.
