Ingredients

  • 1 cup creamy peanut butter
  • 1 cup semisweet chocolate chips
  • 1 cup butterscotch chips
  • 1/2 cup unsalted butter
  • 2 cups quick-cooking oats
  • 1 cup packed brown sugar
  • 1/2 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1 cup dry roasted peanuts (chopped)

Directions

  1. In a large saucepan, melt the butter over medium heat.

  3. Remove the saucepan from the heat and stir in the peanut butter and vanilla extract until well combined.
  4. Fold in the oats and chopped peanuts until evenly coated.
  5. Press the mixture into a greased 9x13-inch baking dish, spreading it out evenly.
  6. In a microwave-safe bowl, melt the chocolate chips and butterscotch chips together in the microwave, stirring every 30 seconds until smooth.
  7. Pour the melted chocolate mixture over the oat mixture in the baking dish, spreading it out with a spatula.
