Ingredients

  • 2 sheets puff pastry, thawed
  • 1 ½ pounds salmon fillets, boneless and skinless
  • 1 cup white rice, cooked
  • 1 cup mushrooms, sliced
  • 1 onion, diced
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons butter
  • 1 egg, beaten
  • Salt and pepper, to taste

Directions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, melt the butter over medium heat. Add the onions and mushrooms, and cook until softened.
  3. Add the salmon fillets to the skillet and cook for 5 minutes on each side, until lightly browned. Remove the salmon from the skillet and let it cool.
  4. In a large bowl, mix together the cooked rice, dill, salt, and pepper.
  5. Roll out one sheet of puff pastry and place it in a greased baking dish.
  6. Spread half of the rice mixture over the puff pastry.
  7. Place the cooled salmon fillets on top of the rice mixture.
  8. Spread the remaining rice mixture over the salmon.
  9. Cover the filling with the second sheet of puff pastry and pinch the edges to seal.
  10. Brush the top of the pie with the beaten egg.
  11. Bake in the preheated oven for 30-35 minutes, until the pastry is golden brown and crispy.
  12. Remove from the oven and let it cool for a few minutes before serving.
  13. Slice and serve the Koulibiaka with a side of fresh greens.
