Ingredients

  • 1 cup chopped macadamia nuts
  • 1 cup shredded coconut
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup coconut milk
  • 1/2 cup sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt

Directions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a bowl, combine the macadamia nuts, shredded coconut, crushed pineapple, coconut milk, sugar, eggs, and vanilla extract.
