Mom's Pumpkin Rolls are a delectable treat perfect for fall. These soft, fluffy rolls are filled with a spiced pumpkin filling and topped with a creamy frosting. They are great for breakfast, dessert, or a snack any time of day.
Ingredients
- 2 1/4 tsp active dry yeast
- 1/2 cup warm water
- 1/2 cup sugar
- 1/2 cup warm milk
- 1/3 cup butter, melted
- 1/2 cup canned pumpkin
- 1 tsp salt
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 4 cups all-purpose flour
- 1/4 cup butter, softened
- 1/2 cup brown sugar
- 1 tsp ground cinnamon
- 1/2 cup powdered sugar
- 2 tbsp milk
- 1/2 tsp vanilla extract
Directions
- In a small bowl, dissolve yeast in warm water and let it sit for 5 minutes.
- In a large bowl, mix sugar, warm milk, melted butter, pumpkin, salt, cinnamon, nutmeg, and 2 cups of flour.
- Add yeast mixture and remaining flour to form a soft dough. Knead for 6-8 minutes.
- Place in a greased bowl, cover, and let it rise for 1 hour.
- Punch down dough and roll out into a 12x18 inch rectangle.
- Spread softened butter over dough and sprinkle with brown sugar and cinnamon.
- Roll up dough tightly and cut into 12 rolls.
- Place in a greased 9x13 inch pan, cover, and let rise for 30 minutes.
- Bake at 375°F for 25-30 minutes or until golden brown.
- Mix powdered sugar, milk, and vanilla extract to make frosting. Drizzle over warm rolls.
