Ingredients

  • 1 package (9 inches) refrigerated pie crust
  • 1 tablespoon olive oil

  • 4 cups fresh spinach leaves
  • 1 cup lump crab meat, picked over for shells
  • 3 large eggs
  • 1 cup half-and-half
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 cup shredded Swiss cheese

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Unroll the refrigerated pie crust and press it into a 9-inch tart pan or a muffin tin. Trim any excess dough.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Cook until the onion is translucent and the garlic is fragrant.
  4. Add the spinach leaves to the skillet and cook until wilted. Remove from heat and set aside to cool.
