Ingredients

  • 1 tablespoon vegetable oil
  • 1 small onion, thinly sliced
  • 1 medium green bell pepper, thinly sliced
  • 1 medium red bell pepper, thinly sliced
  • 1 pound beef sirloin or ribeye steak, thinly sliced
  • Salt and black pepper to taste
  • 4 slices provolone cheese, cut into quarters
  • 12 mini slider buns or dinner rolls

Directions

  1. Heat the vegetable oil in a large skillet over medium-high heat.
  2. Add the sliced onion and bell peppers to the skillet and sauté for about 5 minutes until they have softened and slightly caramelized.
  3. Push the vegetables to one side of the skillet and add the thinly sliced beef to the other side of the skillet.
  4. Season the beef with salt and black pepper, and cook for 3-4 minutes, stirring occasionally until it is browned and cooked through.
  5. Combine the beef with the sautéed vegetables in the skillet and mix well.
  6. Place a quarter slice of provolone cheese on top of the beef and vegetable mixture. Continue to cook for 1-2 minutes until the cheese has melted.
  7. Slice the mini slider buns or dinner rolls in half horizontally.
  8. Spoon a portion of the beef, pepper, and onion mixture onto the bottom half of each bun.
  9. Place the top half of each bun on the beef mixture to complete the mini cheesesteaks.
  10. Serve immediately and enjoy!
