Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cut into cubes
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 1/4 cup ice water
  • 3 large eggs
  • 3/4 cup granulated sugar
  • 1/2 cup fresh lemon juice
  • 2 tsp lemon zest
  • 1/4 cup heavy cream

Directions

  1. In a food processor, pulse together the flour, butter, sugar, and salt until it resembles coarse crumbs.
  2. Add ice water and pulse until the dough comes together.
  3. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  4. Preheat the oven to 375°F and grease a mini tart pan.
