Directions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9-inch springform pan.
  2. In a mixing bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and ground ginger for the crust. Stir until the crumbs are evenly coated. Press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes, then remove from the oven and set aside.
  3. In a large mixing bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth and creamy. Add the eggs one at a time, beating well after each addition. Stir in the mango puree and flour until fully incorporated.
