Ingredients

  • 2 cups Jasmine rice
  • 4 cups water
  • 1 teaspoon salt
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 4 baby bok choy, halved
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon red pepper flakes (optional)
  • Sesame seeds, for garnish

Directions

  1. In a medium saucepan, rinse the jasmine rice under cold water until the water runs clear. Drain the rice.
  2. In the same saucepan, add the rinsed rice, water, and salt. Bring to a boil over high heat.
  3. Once boiling, reduce the heat to low and cover the saucepan with a tight-fitting lid. Cook for 15-20 minutes, or until the rice is tender and the water is absorbed.
  4. While the rice is cooking, heat the vegetable oil in a large skillet over medium heat. Add the minced garlic and grated ginger. Cook for 1-2 minutes, or until fragrant.
  5. Add the halved bok choy to the skillet. Stir-fry for 3-4 minutes, or until the bok choy is wilted and slightly browned.
  6. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, and red pepper flakes (if using).
  7. Pour the sauce over the cooked bok choy in the skillet. Stir to coat the bok choy evenly.
  8. Once the jasmine rice is cooked, fluff it with a fork and transfer it to a serving dish. Arrange the stir-fried bok choy on top of the rice.
  9. Garnish with sesame seeds and serve hot. Enjoy!
