Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 chipotle pepper in adobo sauce, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 2 cans (15 ounces each) black beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 cup frozen corn kernels
  • 1 lime, juiced
  • Salt and pepper to taste
  • Optional toppings: avocado, cilantro, sour cream, shredded cheese

Directions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onions, garlic, chipotle pepper, cumin, and smoked paprika. Cook until onions are softened, about 5 minutes.
  3. Add black beans, vegetable broth, diced tomatoes, and corn kernels to the pot. Stir well.
  4. Bring the soup to a boil, then reduce heat and let it simmer for 15 minutes.
  5. Using an immersion blender, blend about half of the soup until smooth. Alternatively, you can transfer half of the soup to a blender and blend until smooth, then return it to the pot.
  6. Add lime juice, salt, and pepper to taste. Stir well.
  7. Serve the soup hot, topped with desired toppings such as avocado, cilantro, sour cream, or shredded cheese.
