  • 1 pound fresh okra pods
  • 1 tablespoon vegetable oil
  • 1 small onion, finely diced

  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 cup diced tomatoes
  • 1 cup coconut milk
  • 1 tablespoon fresh lime juice
  • Salt and pepper to taste

Directions

  1. Wash the okra pods and trim the stems. Slice them into 1/4-inch rounds.
  2. Heat the vegetable oil in a large skillet over medium heat. Add the diced onion and minced garlic. Sauté until the onion is translucent and fragrant, about 2-3 minutes.
