Ingredients

  • 1 pound ground turkey
  • 1 small head of cabbage, thinly sliced
  • 1 onion, diced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 3 cloves of garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Directions

  1. Set your Instant Pot to sauté mode and add the ground turkey. Cook until browned, breaking it up into small pieces.
  2. Add the diced onion, sliced carrots, sliced celery, and minced garlic to the Instant Pot. Sauté for a few minutes until the vegetables start to soften.
  3. Add the thinly sliced cabbage, diced tomatoes, chicken broth, dried thyme, dried oregano, bay leaf, salt, and pepper to the Instant Pot. Stir well to combine all the ingredients.
  4. Close the Instant Pot lid and set the valve to sealing position. Cook on high pressure for 10 minutes.
  5. Once the cooking time is up, allow the pressure to release naturally for 10 minutes. Then, carefully do a quick release for any remaining pressure.
  6. Open the Instant Pot lid and give the soup a good stir. Taste and adjust the seasoning if needed.
